A Natural Source of Trans-Resveratrol Produced by Yeast
Resveratrol is a commonly occurring metabolite found in low
concentrations in several natural food sources, such as grapes and
berries. The trans-isomeric form of resveratrol is the basis of many
purported health benefits. Resveratrol has been reported to have
anti-aging properties, cancer preventive activity, and cardiovascular
protective activity. A novel strain of baker’s yeast, Saccharomyces
cerevisiae, produces inordinately high levels of trans-resveratrol. This
highly efficient strain and subsequent purification produces a pure,
cost-effective all-natural product.
